Very good info...Let me add one concept on your water course or stream advice:

When designing the streambed, it is VERY difficult to create the streambed with a continuous downward slope...and in fact, rivers in nature don't really DO THIS either.

It's good enough if you create pockets that will collect water, then "spill" over or cascade to the next level. On the surface, you may not even see this, because you won't necessarily see the contour of the bottom of the streambed. On the surface, you can make it look like a natural stream by doing it this way.
